We’ll explore hydration levels, fermentation timing, flour varieties, and advanced shaping and scoring techniques to help you create bakery-quality loaves at home. You’ll learn how to control flavor, troubleshoot common issues, and experiment with specialty sourdoughs from high-hydration artisan loaves to enriched breads and savory inclusions. The class includes tastings and written guides.
